My goodness. I've been trying to share this fun post with you since late last week!

Between packing up my office, visiting family in PA over the weekend, hosting/server issues (don't even get me started on this one), and reviewing final book copyedits, there's hardly been a free moment.

But I'm making that free moment happen now because this cookbook—Minimalist Baker's Everyday Cooking: 101 Entirely Plant-Based, Mostly Gluten-Free, Easy and Delicious Recipes—is too fantastic to miss.

I still remember the moment I stumbled across Dana Shultz's fan-freakin'-tastic blog, Minimalist Baker . . .

It was a Saturday morning in the spring of 2014, and I was perusing Pinterest for photography inspiration to shoot a cheesecake recipe I was working on at the time. I originally set out in search of inspiration for photos of a standard size cheesecake with berries, but none of that mattered once I laid eyes on Dana's mini 7-Ingredient Vegan Cheesecakes.

I immediately clicked through to the recipe (my mouth likely agape) and was awestruck by the fresh, clean, and stunning blog that appeared before my eyes.

It's unlikely this is your first time hearing about Minimalist Baker but on the off chance it is, do your eyes and your appetite a solid and check it out asap. Ever since that first magical brush with Dana's drool-worthy, approachable recipes and playfully captivating photography style, I've been hooked. And I did a little dance when I caught wind that a Minimalist Baker cookbook was in the works.

Cookbooks are one of the few things I collect, and this one was destined to be (and is) a keeper. As the title promises, it's packed with plant-based, mostly gluten-free recipes that are simple to make and absolutely delicious. The recipes are clear, concise and easy to follow and the photos are stunning. It also has practical tips, tricks, and resources that are great for anyone who's just stepping into the world of plant-based cooking/baking. Stumped by flax "eggs" and soaked cashews? Don't worry 'bout a thing, Dana's got your back.

The only difficult thing was choosing which recipe to make first. It was a lengthy, four-way tug of war, and The Best Vegan Enchiladas ultimately prevailed. But the Double Chocolate Gluten-Free Waffles, Thai Quinoa Meatballs, and No-Bake Strawberry Cheesecake Bars certainly brought their A game.

Best Vegan Enchiladas from Minimalist Baker's Everyday Cooking

Ingredients

ENCHILADA SAUCE

  • 1 Tbsp (15ml) grape seed oil, avocado oil, or coconut oil
  • ½ (75g) large white onion, diced
  • 3 cloves (1½ Tbsp or 9g) garlic, minced
  • 1 15- ounce (425g) can tomato sauce
  • 1 (canned) chipotle pepper in adobo, chopped, plus 1 tsp adobo sauce (plus more for taste)
  • ½ cup (120ml) water (or substitute vegetable broth)
  • 1–2 Tbsp (15–30ml) maple syrup (or substitute coconut sugar), plus more to taste
  • Sea salt and black pepper, to taste

ENCHILADA FILLING

  • 1 Tbsp (15ml) grape seed oil, avocado oil, or coconut oil
  • ½ (75g) large white onion, diced
  • 1 (17g) poblano pepper, seeds removed, diced
  • Sea salt and black pepper, to taste
  • 1 15-ounce (425g) can vegetarian refried beans or pinto beans, well drained
  • 8 white or yellow corn tortillas

TOPPINGS (optional)

  • Lime juice
  • Red onion, diced
  • Ripe avocado, sliced
  • Cilantro, torn/chopped

Instructions

  • Heat a large skillet over medium heat. Once hot, add 1 Tbsp (15ml) grape seed oil, the onion, and the garlic. Cook, stirring frequently, until soft and translucent, 4–5 minutes.
  • Add the tomato sauce, chipotle pepper, adobo sauce (plus more to taste), maple syrup and water. Reduce the heat to low and simmer for 5 minutes, covered (to prevent splattering).
  • Transfer the sauce to the bowl of a blender (optional) and blend well. Taste and adjust the seasonings as needed, adding more adobo sauce for heat, salt for savoriness, and maple syrup for sweetness.
  • Rinse the skillet slightly and place over medium heat to prepare the filling. Also preheat the oven to 350 degrees F (176 degrees C).
  • Once the skillet is hot, add 1 Tbsp (15ml) grape seed oil, the onion, and the poblano pepper. Season with a pinch each of salt and pepper. Cook until the onion is translucent and the pepper has a bit of color, about 3–4 minutes.
  • Add the refried beans and stir/mash to combine. Add ⅓ cup (~90ml) of the enchilada sauce for extra flavor. Taste and adjust the seasonings as needed. Remove from the heat and set aside.
  • Wrap the tortillas in a damp paper or cloth towel and microwave to warm for 30 seconds. (Alternatively, place the tortillas directly on the oven rack for 1 minute to heat through.)
  • Pour a bit of sauce into the bottom of 9 × 13–inch (3-quart) baking dish. Spread to coat. Take one corn tortilla and lay it down in the dish. Fill with a modest amount of filling (keeping in mind there needs to be enough for 8–10 tortillas), then roll up the tortilla. Place the seamside down at one end of the dish. Continue until all of the tortillas are filled and wrapped, adding more sauce as needed.
  • Pour the remaining sauce over the top of the enchiladas in a stripe down the middle. Brush/spray the edges with oil for crisp edges (optional).
  • Bake at 350 degrees F (176 degrees C) for 15-20 minutes, or until warmed through. Top with desired toppings and serve.
  • I highly recommend lime juice, red onion, avocado, and cilantro, but these enchiladas are delicious on their own! Leftovers keep, covered, in the refrigerator for up to 3 days, though best when fresh. Reheat in a 350 degree F (176 degree C) oven for 15-20 minutes, or until warmed through.

    I have a thing for cookbooks, too. There's just something about holding the book in my hands, putting sticky notes on the pages of recipes I want to try...it just DOES SOMETHING for me! :)

    I love all of the recipes I have tried from Minimalist Baker. Delicious and fairly simple. My kids enjoy making treats from her blog, they find the recipes easy to understand. Dana's recipes are real crowd pleasers!

    I'd love to win to give this book to my dad. He introduced me to the Minimalist Baker blog and we discuss her recipe emails together every time a new one is sent out. I recently became vegan so it would be helpful to have those recipes so my dad and I can learn new food substitutes and adaptions. We both love cooking and he, though not vegan, is so accommodating of my decision and tells me he thinks it is a fun challenge to be making different foods to suit me. I am incredibly grateful for that! It would be great to have the book to help with this transition and have lots of fun cooking with my dad!
