Strawberry, Cashew & Cardamom Smoothie

This strawberry, cashew & cardamom smoothie is one of my all-time favorites. There's something special about the combination of fresh strawberries and ground cardamom. The sweet brightness of strawberries coupled with the warm, aromatic hint of cardamom = perfection.

I've enjoyed this smoothie twice in the last few days. I can't quite figure out why, but something about it feels peaceful. Maybe it's the fact that it's made from nourishing, pure ingredients or maybe it's that ballerina pink hue. Whatever it is, I like it.

And although I love a big banana-laden smoothie, this one is completely banana-free. The creaminess comes from raw cashews, which impart a mild flavor and allow the strawberries and cardamom to shine through.

To make it, you'll blend frozen strawberries, plant-based milk, raw cashews, a few medjool dates (to sweeten), and ground cardamom until smooth. If you want to pop the sweetness and deepen the flavors, add a tiny pinch of sea salt. Totally optional but completely delicious.

Strawberry, Cashew & Cardamom Smoothie

Servings 2 (11-ounce) smoothies

Ingredients

  • 2 cups fresh or frozen strawberries, hulled
  • 1 cup unsweetened plant-based milk
  • ¼ cup raw cashews*
  • 2 to 3 medjool dates, pitted*
  • ¼ teaspoon ground cardamom
  • tiny pinch sea salt (optional)

Instructions

  • Combine all ingredients in a high-speed blender and blend on high until smooth.

Notes

*If you don't have a high-speed blender (e.g., Vitamix, Blendtec), I recommend soaking your cashews and dates in warm water for at least 30 minutes before blending.

    This looks SO GOOD and something my teen daughter (an unwilling participant in our new vegan ways) will consume. Do you think chia or hemp hearts would be suitable in this?
