There's nothing fancy or wildly creative about this recipe, but that doesn't make it any less awesome.
You'll make a simple vanilla chia pudding by whisking together plant milk, chia seeds, pure maple syrup, and a bit of vanilla. Pop it in the refrigerator to chill overnight and wake-up to sweet, creamy, and glorious pudding.
Then, whip up some speedy berry soft serve by adding 2 cups frozen strawberries and ½ cup frozen blueberries to a food processor or uber-powerful blender and give it a whirl... for a few minutes. It takes a tad bit longer to process than frozen bananas, so be patient and give it a tiny splash of encouragement plant milk/water if needed to get it moving. With a little patience and a few scrapes down the side of your food processor, you'll have a cold, smooth, ruby-hued berry soft serve. If your berries are extra tart, drop in a pitted date or two to add a little sweetness.
Once you have both components ready to go, grab two parfait glasses or jars and layer the chia pudding and berry soft serve, one after the other. Top as desired, grab a friend, and dig in.

Berry Soft Serve & Vanilla Chia Pudding Parfait
Ingredients
Vanilla Chia Pudding
- 1 ¼ cups unsweetened plant milk
- ¼ cup plus 1 tablespoon chia seeds
- 1 ½ to 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
Berry Soft Serve
- 2 cups frozen strawberries
- ½ cup frozen blueberries
- 1 to 2 medjool dates, pitted (optional to sweeten)
Topping Ideas
- coconut flakes
- sliced strawberries
- blueberries
Instructions
Vanilla Chia Pudding
- Vigorously whisk the plant milk, chia seeds, maple syrup, and vanilla together in an airtight jar or container until the chia seeds are distributed throughout the liquid. Refrigerate for at least 8 hours or overnight to thicken.
- In the morning, vigorously whisk the chia pudding. If it's too thin, add in more chia seeds, 1 tablespoon at a time, to thicken. If it's too thick, add in more plant milk, 1 tablespoon at a time, to thin.
Berry Soft Serve
- Make the soft serve just before serving. Add the frozen strawberries, blueberries, and dates (if using) to a food processor and process until smooth with a sorbet-like texture, stopping to scrape down sides as needed. You might need to add in a very small amount of plant milk to get it moving. I recommend adding 1 tablespoon at a time and adding as little as possible to maintain a thick, soft-serve texture.
Assemble
- In two jars or parfait glasses, layer the chia pudding and berry soft serve, one after the other. Sprinkle with desired toppings and serve immediately.
