Our family is currently in the midst of a bit of an adventure, and it recently dawned on me that I've failed to share any of the details with you.
Dan's company, Odeza, recently signed their first big hospital client. This particular hospital system is based out of Waukesha, Wisconsin, which is about 20 minutes outside of Milwaukee.
Dan knew that once the deal closed, he'd need to be on-site for two to three months to get everything up and running. Although Milwaukee isn't terribly far from Chicago, it's far enough (about two hours each way with traffic) that a daily commute back-and-forth wasn't feasible.
With a little baby at home, separating our family each week wasn't feasible either.
And so, as of last weekend, we're temporarily living in Milwaukee. We were able to find a short-term lease in a beautiful building with views of both the city and lakefront. It's as perfect as can be, especially with such last-minute notice.
However, given that we're only living here for a few months, it didn't make sense to transport everything in our kitchen. Thus, I've had to get creative with a more scaled-back selection of ingredients.
This creamy strawberry chia pudding is just one example of the goodness that can come to be with a small handful of quality ingredients.
It's made with just five ingredients, including:
So Delicious Strawberry Coconutmilk Yogurt Alternative
Plant-based milk
Pure maple syrup (optional to sweeten)
Sea salt
Chia seeds
An array of toppings can be added, too, but those are totally optional.
So Delicious Coconutmilk Yogurt Alternative comes in several flavors, including unsweetened plain, strawberry, and key lime. I used strawberry for this chia pudding, but you could actually use any of the flavors and simply pair your toppings accordingly.
So Delicious Strawberry Coconutmilk Yogurt Alternative is silky smooth, ultra creamy, subtly sweet, and perfectly tangy.
To make this creamy strawberry chia pudding, you'll add two containers of So Delicious Strawberry Coconutmilk Yogurt Alternative to a bowl along with plant-based milk, maple syrup (if you'd like to sweeten the pudding a touch more), and a pinch of sea salt.
Whisk the mixture together until super smooth. Then, add the chia seeds and whisk again to incorporate.
Chill the chia pudding for at least four hours (or overnight).
The lengthy wait for chia pudding can be painful, but I promise your patience will be rewarded.
After you've chilled the chia pudding, give it a vigorous whisk to redistribute the chia seeds. I find this ratio of ingredients yields a perfectly thick pudding, but everyone's chia pudding preferences are a bit different. So, if it's too thick for your liking, add a bit more plant-based milk. If it's too thin, whisk in a couple more tablespoons of chia seeds.
Just before serving, prepare your toppings.
I recommend sliced strawberries and bananas, pepitas, and hemp hearts, but you do you. Feel free to leave this creamy strawberry chia pudding bare or add every nut and seed in your cupboard.
In this particular instance, less is more and more is more.

Creamy Strawberry Chia Pudding
Ingredients
Creamy Strawberry Chia Pudding
- 2 (5.3 ounce) containers So Delicious Strawberry Coconutmilk Yogurt Alternative
- 1 cup So Delicious Unsweetened Organic Almondmilk
- 1–2 tablespoons pure maple syrup (optional to sweeten)
- Pinch sea salt
- â…“ cup chia seeds
Optional Toppings
- Sliced strawberries
- Sliced banana
- Pepitas
- Hemp hearts
Instructions
- In a medium airtight container, whisk together the So Delicious Coconutmilk Yogurt Alternative, plant-based milk, maple syrup, and sea salt. Add the chia seeds and whisk until they're evenly dispersed throughout the liquid. Refrigerate for at least four hours or overnight.
- Thoroughly whisk after refrigerating to redistribute the chia seeds.
To Assemble
- Spoon the chia pudding into three bowls or glasses. Garnish with toppings, if desired.
