Thick Frosty Peanut Butter Banana Cauliflower Smoothie

This vegan thick frosty peanut butter banana cauliflower smoothie is healthy, delightfully shake-like, cool, and creamy. Frozen cauliflower florets, frozen bananas, almond milk, peanut butter, and a splash of vanilla are blended to perfection. The trick to create an ultra frosty and thick smoothie is simply to add less liquid. Patience is definitely a virtue as you blend, but if you take the time to stop and scrape down the sides (instead of adding more liquid), you'll be rewarded with a thick, shake-like breakfast treat.

Ingredients

  • 1 heaping cup frozen cauliflower florets
  • 2 ripe and speckled bananas, peeled, sliced, and frozen
  • 1 cup unsweetened almond milk, plus more only if absolutely needed to encourage blending*
  • 1 to 2 tablespoons natural peanut butter, to taste*
  • ½ teaspoon pure vanilla extract

Instructions

  • Add all ingredients to a high-speed blender, and blend on high until smooth, stopping as often as needed to scrape down the sides. You'll want to add as little almond milk as possible to maintain a thick, frosty texture. Patience is a virtue here—just keep stopping to scrape down the sides as needed, and you'll be rewarded with a delightfully thick, shake-like treat.
  • Scoop into a glass (or two).
  • Serve immediately.

Notes

No Nuts? No Problem. To keep this smoothie nut-free, simply swap out the almond milk for a nut-free plant-based milk (e.g., soy milk, oat milk, hemp milk, etc.) and swap out the peanut butter for sunflower butter.
