Other than a warm and sunny outlier this past Sunday, May is proving to be a dreary, rainy, and chilly month in Chicago thus far. And although the weather forecast could convince a gullible gal (my hand is raised) that things will be on the up and up come this Friday, my long history with this city's wild weather keeps my sunshine hopes tethered (at least a tiny bit).
Spring of 2015 was one of the gloomiest I can remember and by the end of June, everyone in the city seemed to be going stir crazy. The one perk was that the grass, flowers, and trees looked extra lush and lovely by the time the sun finally broke through in July. The silver lining.
So in the face of what's started off as yet another gloomy spring, I've been rediscovering the little things that lend a bit of cheer to my days. After all, this kind of weather is the perfect excuse to...
Curl up on the couch with an inspiring book (I'm currently rereading Divine Intuition by Lynn Robinson). Cook up those beloved warming winter stews and curries just a few more times. Binge watch a TV series or two on Netflix—my latest obsession is HGTV's Fixer Upper.
And when in doubt, this uplifting carrot, mango & ginger smoothie does the trick too. Between it's warm orange glow, fresh sweetness, and lively ginger notes, it's been putting the SPRING back in my step. For the record, I didn't intend to turn that into a pun, but in the name of lighthearted fun, I'm rolling with it. And apparently now I'm rhyming too.

Uplifting Carrot, Mango & Ginger Smoothie
Ingredients
- 1 large fresh mango, peeled and cubed (about 2 cups)
- 3 small carrots or 1 large carrot, peeled and diced (about ¾ cup)
- 2 pitted medjool dates, to sweeten (optional)*
- 1 tablespoon fresh lemon juice
- 2 teaspoons peeled and minced fresh ginger
- 1 cup filtered water
- ¼ to ½ cup ice, to cool (optional)
Instructions
- Add all ingredients to a high-speed blender and blend on high until very smooth, ensuring that the carrots and dates are broken down and fully incorporated.
