{Delicious in its own right: The Hodgepodge Special}
When the going gets busy, my meals get crazy. Give me a busy week, and I'll often give you some chaotically-contrived mix of anything and everything my taste buds decide to crave. Oddly, this week hasn't been that busy, but if you judged by the looks of my dinners, you'd certainly think it was. Take last Sunday, for instance; I tossed together the above in a carb- and veggie-craving frenzy. This concoction was a compromise between everything I was craving at the time. It's a complete and utter hodgepodge, but it's a delicious and fairly healthy hodgepodge, nonetheless. So delicious, in fact, that I decided to share the unexpected pairing of ingredients with you. This is the perfect weeknight dinner for one and an easy way to bring peace and harmony to some seriously indecisive taste buds.
The Hodgepodge Special (Serves 1)
* 1 serving Trader Joe's Frozen Mashed Potato Medallions, cooked according to package
* ½ cup cannellini beans, drained and rinsed
* ¼ cup reduced-fat shredded cheese of choice
* healthy handful of pea shoots
* 1 golden heirloom tomato, sliced into wedges
* 2 tablespoon balsamic vinaigrette
Layer the cooked mashed potatoes and cannellini beans on a plate. Top with the shredded cheese and microwave on high for 1-2 minutes or until the cheese is melted. Top the potato and bean combination with a handful of pea shoots. Plate the wedged heirloom tomato alongside of the potato mixture, and drizzle everything with the balsamic vinaigrette.
