Creamy Vegan Eggnog Smoothie

First things first: Merry Christmas Eve to those of you who celebrate! I'm having a difficult time wrapping my head around the fact that it's already December 24th. Life is moving at time-warp speed, and we're all just along for the sleigh ride. Had to squeeze in that bit of cheese-tastic holiday humor. Forgive me? Please?

With time moving so quickly, I nearly forgot about this flavorful holiday smoothie recipe. My forgetfulness is no indication of the worth or goodness of this smoothie. In fact, it seems to be quite the opposite. Fortunately, the ingredients are straightforward and tend to be staples in most kitchens, so most of us can easily toss this together for a Christmas morning smoothie or even a Christmas Eve dessert (checkout the dessert variation notes).

To make this holiday treat, you'll add frozen bananas, water or coconut milk, pecans, coconut sugar, vanilla extract, nutmeg, and cinnamon to a high-powered blender. Blend that fantastical combination of goodness on high for a chilly minute or two, pour into a glass, and guzzle.

This is one of those smoothies that wraps you in its spiced embrace and sweeps you away to a far-off place of comfort. Its day-dream-encouraging nature is part of what makes it so special. Despite the frost on your glass, your heart will be warmed by this one.

Creamy Vegan Eggnog Smoothie

To make this creamy vegan eggnog smoothie, you'll add frozen bananas, water or coconut milk, pecans, coconut sugar, vanilla extract, nutmeg, and cinnamon to a high-powered blender. Blend that fantastical combination of goodness on high for a chilly minute or two, pour into a glass, and guzzle.

Ingredients

  • 2 frozen bananas
  • 1 cup filtered water*
  • 2 tablespoons raw pecans
  • 1 teaspoon coconut sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon ground cinnamon

Instructions

  • Add all ingredients to a high-speed blender. Blend on high for 2-3 minutes or until very smooth.
  • Pour into a glass and top with ground nutmeg, if desired.

Notes

*To turn this smoothie into a decadent vegan eggnog mylkshake, simply swap out some of the water for full-fat coconut milk. I recommend ⅓ to ½ a cup coconut milk with ⅔ to ½ a cup water, depending on your desired richness.
