There's been a lot of pumpkin and warming spices around these parts lately. Although I'm loving fall influenced dishes at the moment, last weekend I was craving something tropical and energizing. I suppose I have the overcast, dreary weather to thank for this sweet, summery smoothie.

And when paired with coconut water and a squeeze of fresh lime juice? Well, this smoothie is just about capable of transporting its appreciative sipper to a far-off place with turquoise seas and palm trees. If only I had one of those little paper umbrellas...
Maca is added for an energy and mood boost; however, you can absolutely leave it out if you don't have it on hand. Its nuttiness is balanced by the bright acidity of the pineapple and mellowed by the sweetness of the banana, so it's easy to squeeze in a tablespoon or two without overpowering the other flavors.
This makes enough for two small smoothies or one gigantic smoothie. Amongst the thousands of things my awesome cookbook recipe testers have taught me, the one tidbit of info that has been echoed throughout their feedback is this: a one-serving smoothie for me is more like a 2- or 3-serving smoothie for most people.

Pineapple-Maca Bliss Smoothie
Ingredients
- 2 ripe and speckled bananas, peeled, sliced, and frozen
- 2 cups fresh pineapple chunks
- 1 cup coconut water or filtered water
- 1 to 2 tablespoons maca powder
- 1 tablespoon fresh lime juice
Instructions
- Combine all ingredients in a high-speed blender and blend on high until completely smooth.

Just made this smoothie! Delicious! I’ve been trying to incorporate Maca powder into more smoothie recipes but it doesn’t always work out, however this one definitely does! I didn’t have coconut water on hand so I used coconut yogurt instead. Super creamy, balanced, and energizing. The perfect breakfast smoothie.
