Peachy Pear Smoothie

Light, crisp, sweet, refreshing, cool, and frosty. This simple peachy pear smoothie comes together with just five ingredients: one ripe + juicy pear, a few heaps of frozen peaches, a splash of almond milk, dates to sweeten, and fresh lemon juice to brighten. It's sweet but not too sweet, and you can up the sweetness or reduce it to suit your tastes.

This simple smoothie comes together with just five ingredients: one ripe + juicy pear, a few heaps of frozen peaches, a splash of almond milk, dates to sweeten, and fresh lemon juice to brighten. It's sweet but not too sweet, and you can up the sweetness or reduce it to your tastes (sweeter=more dates, less sweet=fewer dates).

It's ideal for welcoming the warmer temperatures that (usually) present themselves in May.

And if you're experiencing weather like we've had in Chicago, then a few sips of this sunshiny beverage might just be enough to trick your mind into believing that the weather is warm and blissful as opposed to gloomy and bone-chilling. The last week was outlined by weather reminiscent of early March as opposed to late April/early May, but the temps and sunshine appear to be on the up and up.

Until then, I'll gladly accept the dreary weather as an acceptable excuse to drink this cheery peachy pear smoothie by the glassful, and I hope you will too. Straws in, bottoms up.

Peachy Pear Smoothie

Servings 1 (20-ounce) smoothie or 2 (10-ounce) smoothies

Ingredients

  • 1 ripe D'Anjou or Barlett pear, cored and roughly diced
  • 2 cups frozen peach slices
  • ½ cup unsweetened almond milk
  • 2 soft medjool dates, pitted*
  • 1 tablespoon fresh lemon juice

Instructions

  • Add all ingredients to a high-speed blender, and blend on high for 2 minutes or until completely smooth.

Notes

*If you're not using a high-speed blender, soak the dates in hot water for 30 minutes before blending.

    I'm so waiting for peaches to be in season, good thing pears are coming soon! Love the use of dates, they are my FAV.
