Cinnamon Roll Soft Pretzels

Super soft and chewy pretzels are infused with cinnamon and sugar and topped with a cinnamon-sugar glaze. These are cinnamon rolls in soft pretzel form and they are a-maz-ing.

  • 1 1/2 cups warm water
  • 3 tablespoons brown sugar
  • 1 teaspoon sea salt
  • 1 package active dry yeast
  • 3 cups whole-wheat flour
  • 4 tablespoons butter, melted
  • 1 teaspoon cinnamon
  • 2/3 cup baking soda
  • 10 cups water
  • 2/3 cup granulated sugar
  • 2 tablespoons cinnamon
  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 5-6 tablespoons water
  1. Add water, brown sugar, and kosher salt to a large, glass mixing bowl. Stir gently and top with yeast. Let sit five minutes or until a foam appears on the surface of the water. Add in the flour, butter and 1 teaspoon cinnamon and stir for 2-3 minutes to mix. Take dough out of bowl and knead on a clean work surface for 5-7 minutes, until smooth and elastic. You might need to add in more flour if your dough is too sticky.
  2. Coat glass bowl with vegetable oil and return dough to bowl. Let rise in a warm place for 1 to 1 1/2 hours or until the dough has doubled in size.
  3. Preheat oven to 425 degrees Fahrenheit.
  4. Mix baking soda and water in a large, glass bowl. Set aside.
  5. Mix together 2/3 cup granulated sugar and 2 tablespoons cinnamon in a wide but shallow bowl.
  6. Punch down dough and cut into 8 equal-size pieces.
  7. Roll each dough ball out into a 3/4-inch-thin rope. Twist into pretzel shape and drop into baking soda water for 20 seconds. Dip top of pretzel into the cinnamon-sugar mixture and drop onto a baking sheet lined with parchment paper. Repeat with all 8 pieces of dough.
  8. Bake pretzels for 8-10 minutes or until just beginning to turn golden in color.
  9. While the pretzels bake, mix the glaze by adding powdered sugar, 1 teaspoon cinnamon, and 5-6 tablespoons water to a bowl. Whisk together and set aside.
  10. Remove pretzels from oven.
  11. To serve, spoon or drizzle cinnamon glaze over each of the pretzels.
  12. Store leftovers in an airtight container at room temperature. These can be reheated in the microwave for 20-30 seconds.
