A Cure for Whichever Hangover Ails You: Seasoned Grilled Cheese with Avocado and Tomato

Come New Year's day, there are hangovers of all shapes and sizes going on.  There are holiday hangovers: a mix of nostalgia and relief at the realization that the hustle and bustle of the holidays has passed.  For those of us fortunate enough to have two weeks off of work, there are relaxation hangovers; you can only watch 2 movies a day, sleep until 9, 10, or 11am, and not shower until evening on so many consecutive days before you've had enough relaxation and are ready, perhaps hesitantly, to jump back into a more rigorous schedule again.  There are goodie hangovers when just the sight of a holiday cookie or piece of candy is enough to make you full -- even my cat, Jack, has been turning down treats the past few days due to a Greenies infused kitty hangover.  There are social hangovers when your cheeks hurt from laughing with friends and you're just not sure you can muster the energy required to round up the more bubbly, humorous version of yourself needed to mingle your way through another crowded party.  Lastly, there are the common my-head-is-pounding-I-just-want-to-curl-up-and-watch-Lifetime-all-day hangovers resulting from the festivities of NYE.  Regardless of which hangover is ailing you today, I have a cure: Seasoned Grilled Cheese (make that triple cheese) with Avocado and Tomato.  It's simple, amazingly delicious, and will make you forget all about your many hangovers.  Happy New Year!

Seasoned Grilled Cheese with Avocado and Tomato (Makes 2 Sandwhiches)

Blissful Basil Recipe

4 slices of wheat bread

2 tbsp butter

1 avocado, peeled and sliced

1 tomato, cut into 4 slices

2 slices provolone cheese

4 slices sharp cheddar cheese

sea salt and freshly ground black pepper, to taste

1. Heat nonstick skillet over medium heat.

2. Cover one side of each slice of bread with dots of butter.  For each sandwich, place 1 slice of provolone, two slices of cheddar, 2 slices of tomato, and avocado slices between bread.

3. Toast both sides of the sandwiches in skillet until the bread is golden brown and the cheese is melted.  While toasting, season sandwiches on both sides with sea salt and freshly ground black pepper.

4. Enjoy the hangover relief!
