Today's one of those days when I'm feeling extra appreciative of all of the sweet things in life. There's always going to be the bitter, the bad, and the downright ugly, but I find that taking the time to stop, breathe, and appreciate all that I'm grateful for affords me the ability to make room for the less sweet stuff. So, let's put the salty stuff away for a moment and take a deep breath of sweetness. There's so much of it, after all.
The latest and greatest sweet stuff in my life includes the end of a second successful year at a job that humbles and fulfills me, family and friends that never fail to amaze me with their kindness and selflessness, a cat that is completely healthy after a fist fight with cancer, a bright and beautiful sister that just graduated from high school and is headed off to college, and a blueberry pie smoothie that is just sweet enough to bolster all that loveliness without outshining it.
This smoothie takes me back to one of those perfect days of my childhood summers when exhaustion was induced by 10+ hours of swimming and laughing in the sun but somehow, at the end of the day, my spirit never felt more full of happiness and energy. Let's congratulate Vitamin D for that amazingly dichotomous phenomenon and toast to it with a glass full of blueberries.
- ¼ cup full-fat coconut milk
- â…“ cup sweetened vanilla almond milk
- 1 ripe banana
- 2 tablespoons blueberry preserves
- 7-10 ice cubes
- â…“ cup fresh, whole blueberries
- Add first five ingredients to a blender, and blend for 1-2 minutes or until smooth.
- Pour into a glass and top with fresh blueberries.
- Enjoy.
